I love a great cake and especially one that has nutrient dense ingredients. This cake will be a winner at your next party; and no one will know there’s quinoa in it 🙂
Ingredients and Method
(1)
3 cups cooked quinoa (I use 1 cup dry quinoa to 2 cups water)
300ml coconut milk (use a good quality organic brand or make your own.)
1 cup almond meal (I grind 1 cup whole almonds in the food processor)
1/2 cup sugar ( I use rapadura or coconut palm sugar)
1/2 teaspoon sea salt
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon chili powder (my secret ingredient in anything I make! Darn, it’s not a secret anymore…)
(2)
250g unsalted butter
400g dark chocolate
…melt these two over a bain marie
(3)
2 organic eggs
4 egg whites
… whisk together like crazy until you get firm peaks 🙂
Combine (1), (2) and (3) by folding together gently but quickly.
Bake at 175 C (350 F)Â for 1 hour or until the centre comes out clean with a skewer.
I used an Angel food cake tin and it saved me from worrying about having a soggy centre.
